Alberta was my grandmother. She grew up on Cape Cod and spent half a lifetime crossing out and rewriting the same handful of cheesecake pie recipes. Nothing glamorous, just stubborn notes in pencil.
She's not here to second-guess the oven anymore. My boys and I are testing from our place in Lone Tree, starting from what she actually wrote down. The first runs will be a little uneven. That's fine.
We're not here to reinvent pie. We're here so her handwriting doesn't fade.
